Maple brine for turkey, chicken or pork

This tends to give better results for a smoked meat, although it will work just fine if you are roasting. It will impart a noticeable sweetness that compliments hickory, maple or fruit wood used in the smoking process.

Ingredients
  

  • 4 Quarts water divided
  • 1 Cup dark brown sugar
  • 1 Cup white sugar
  • 1 Cup soy sauce
  • 1 Cup maple syrup
  • ¾ Cup sea salt
  • 8 Cloves whole garlic cloves peeled
  • 6 Bay leaves
  • 3 Large fresh thyme sprigs
  • 2 Tablespoons molasses
  • 2 Teaspoons whole black peppercorns
  • 1 Cup bourbon whiskey

Instructions
 

  • Add all ingredients to one half of the water and bring to a soft boil until sugars are dissolved. Add remaining water and let cool before adding meat.
