The Probes: Thinner, Smarter, and Tougher
The old MEATER probes were notoriously thick — about 6mm — requiring you to shove them deep into a piece of meat to protect the internal electronics. This made them impractical for thinner cuts like steaks or fish. The new Pro XL probes are a significant step forward at just 5mm in diameter.
But the real magic is inside. Each probe now features five internal temperature sensors and one ambient sensor, totaling six sensors per probe. This is a massive leap from the previous model, which only had one internal and one ambient sensor. The app automatically identifies the lowest internal reading — the true thermal center — and bases your cook time estimate off that, virtually eliminating the risk of bad probe placement ruining your dinner.

Charging issues plagued the old MEATER Block probes, often resulting in unexpected outages during a long smoke. Hands-On Performance: What We Found in the Test Kitchen
During our tests, we found the MEATER Pro XL’s multi-sensor probes to be a genuine game-changer for large cuts. When smoking a pork shoulder, it’s notoriously difficult to hit the exact thermal center on the first try. Because the Pro XL measures five points along the shaft, it found the coolest part of the butt automatically and adjusted our estimated finish time accordingly.
The app’s Advanced Estimator Algorithm is the best we’ve used. It factors in carry-over cooking and rest time, which means the “time remaining” estimate is actually useful — not just a countdown to a target temp.
The ambient sensors, however, still require a grain of salt. In the BBQ world, we want to know the ambient temperature of the pit (keeping our sights set on 225°F). Because the MEATER’s ambient sensor sits just an inch or two off the surface of the meat, it is heavily influenced by the evaporative cooling of the meat itself. The app will often read the ambient temperature 15°F to 20°F cooler than a dedicated grate probe placed further away. Experienced pitmasters should rely on their smoker’s dome or grate thermometer for true pit temp management, using the MEATER’s ambient reading as a secondary reference.
